Fabio Pisani and Alessandro Negrini are the young chefs who have taken up the baton of Aimo and Nadia in their restaurant in Milan. Along with Stefania, the daughter of Aimo and Nadia, are today the heirs of that unique style which can gather, in a contemporary gesture, the legacy of the rich national culinary history, enriching and stratifying it with new meanings and signs.
Fabio Pisani, born in 1978 in Molfetta, Bari, where he graduated as a chef, has worked in major European maisons: three years in Paris at the Grand Vefour, two years in London at the Waterside Inn, a year at the restaurant Dal Pescatore in Canneto sull’Oglio, then he arrives at Il Luogo di Aimo e Nadia in 2005.
Alessandro Negrini, also born in 1978 in Caspoggio Valmalenco, graduated at the Hotel-Management School in Sondrio. He worked at the Palace Hotel in St. Moritz and at the Gallia Palace in Punta Ala before arriving at our restaurant; he worked here for three years and then he continued his training, two years at the Domaine de Châteauvieux in Geneva and one year at the restaurant Dal Pescatore in Canneto sull’Oglio. Fabio and Alessandro met here, and they become friends and constant companions in life at work.
In 2005 Alessandro returns back at Il Luogo di Aimo e Nadia, brings Fabio with him, and brings the desire to undertake a project with Stefania to build the future of the third generation of the Luogo.
In 2005, another good professional, Nicola Dell’Agnolo, maître, is added to the young team that is forming. Born in province of Pordenone in 1971, he has extensive experience in Italy, Switzerland, France and England. From the hotel Nassauer Hof in Germany, to The Dorchester, The Connaught and The Tainte Claire in London, then back to Italy at La Certosa di Maggiano. Careful and respectful, he made his way over the years to welcome friends and customers of Aimo. Today, along with Stefania, Alessandro and Fabio he is a participant of the projects of the Luogo. Since 2012 he also deals together with Federico Graziani, with the care and selection of wines.
Federico Graziani, born in Ravenna in 1975, boasts a resume that denotes love and passion for wine. Sommelier at 19 years old, Best Sommelier of Italy in 1998, prestigious experiences (Gualtiero Marchesi, Bruno Loubet, Halkin Restaurant, Cracco-Peck) and in 2004 sommelier at Il Luogo di Aimo e Nadia. Meanwhile he graduates in viticulture and enology, enrolls in the Master of Wine in London, writes books and is co-author of the magazine Pietre Colorate. For reasons of affection greater than those that bound him to the Luogo, in 2012 he moved to Veneto, continuing to deal with our wine list with Nicola.
