Edoardo Bongiorni is chef de rang at Voce Aimo e Nadia, a young talent who brings to the dining room his passion for hospitality and catering, which is in his blood. Born in Piacenza in 2001, he took an atypical path: after high school, he studied law at Milan’s Bicocca University, achieving excellent results. Despite this, he felt the need for concrete experience, close to his roots. His family runs a historic restaurant in Piacenza, founded in 1965, and since childhood, Edoardo has been immersed in the dining room atmosphere, learning organization, customer service, and the importance of teamwork.
His arrival at Voce Aimo e Nadia in July 2023 as a commis de rang marked a fundamental transition: a new environment, a fast pace, numerous customers, and every service unique. He remembers his first Monday lunch, with fifty guests in the dining room: an almost shocking experience, which immediately made him realize how stimulating it was to work in a high-end environment.
His typical day begins at 11:00 a.m. with the staff setting up the table, a briefing, and then service. During special events, Edoardo has the opportunity to manage complex services and deepen his understanding of milanese culture. Here, he learned to coordinate events larger than those at the family restaurant, developing versatility and valuable skills.
At the heart of his training are Raffaele Longo, the restaurant manager, and Maitre d’ Marina Brandalise, constant points of reference. Their guidance has allowed him to grow both technically and personally: with them, he learned the importance of discipline, attention to detail, and careful management of service and the team. Thanks to them, Edoardo has found concrete examples of leadership, professionalism, and passion, motivating him to improve every day.
His goal is to one day bring everything he has learned back to Piacenza and the family restaurant, enriching the tradition with new experiences. He wants to be the first in his family to experience something out of town and return with a renewed vision and shared values to share.
