Territori: the Aimo e Nadia Group project presented in collaboration with the Politecnico di Milano

On March 25 in Milan, Territori was presented, a project developed by the Aimo e Nadia Group in collaboration with the Design Department of the Politecnico di Milano. The initiative fosters a dialogue between gastronomy, academic research, and the Italian production system.

The result of a research journey lasting over eighteen months, Territori stems from an in-depth analysis of the relationships that shape the contemporary restaurant world. It is a structured process of observation, listening, and co-design involving chefs, collaborators, and producers, with the aim of making explicit the values and processes – creative, cultural, and sustainable – that have always guided the Group’s work.

The press conference represented a meaningful opportunity for discussion around key themes for the future of the sector: the relationship between cuisine and territories, the enhancement of supply chains, and the cultural role of gastronomy.

Speakers at the conference included Stefania Moroni, CEO of Aimo e Nadia Milano, Alessandro Negrini and Fabio Pisani, Chef Patrons of Aimo e Nadia Milano, together with Francesco Zurlo, Dean of the School of Design at the Politecnico di Milano, Anna Meroni, Professor at the Design Department and Marta Corubolo, Researcher at the Department.

During the event, the Territori Manifesto was presented as the project’s first tangible outcome: a cultural platform aimed at interpreting the deep connection between identity, raw materials, and territories, opening new perspectives for the future of Italian cuisine.

The project also takes shape through a tangible experience: the Chef’s Table Territori, a dedicated space within the restaurant conceived as a place for dialogue and storytelling, where the tasting experience becomes a living narrative of products, supply chains, and people. This format translates the research into a direct experience, making the guest an active part of a broader system.

Territori fits into the legacy of Aimo e Nadia, building on its cultural heritage and projecting it into a contemporary dimension through engagement with the world of research and new generations.

The project is set to further evolve with the creation of a non-profit cultural association, with the aim of becoming a permanent observatory on the future of Italian gastronomy. An open platform designed to connect restaurants, businesses, institutions, and education, fostering research activities, educational pathways, and outreach projects.

In this perspective, Territori is not just a project, but a method and a vision: a cultural infrastructure intended to strengthen the dialogue between those who produce, transform, and tell the story of food, contributing to the development of a more conscious, sustainable, and shared gastronomic system.
